1. Smoked Trout with Orange & Basil

Preparation and Cooking Time: 4 hours and 30 minutes

Servings: 4

Ingredients:

1 Orange zest, grated

6 lbs. (2.7kg) ground trout

½ c. fresh oregano

½ c. Kosher salt

Apple wood chips

Directions:

Butterfly the fish and remove the insides.

Mix oregano with orange zest in a dish.

Apply salt to the trout on both sides.

Sprinkle oregano on the inside of the fish and refrigerate overnight.

The next morning, wash off the salt on the trout and refrigerate for a day.

Place the trout on a preheated smoker for 3-4 hours and serve.
